Matt Preston's Sticky Cola Chicken Wings

These little suckers have been an absolute stalwart in our recipe arsenal for about 10 years now, but it wasn't until recently that we added Agri and took it up a level with a bit of a spicy kick.

When suggesting cola as the key ingredient, we know where your brain naturally goes. Those yankee soda giants have spent billions of dollars to be front of mind when anyone mentions this classic carbonated beverage. But when it comes to cola, we like to dance to our own groove in the form of Byron Bay born StrangeLove Smoked Cola. A cola like no other, this locally made carbonated treat is not only far lower in calories and sugar than its go-to counterparts – the masterminds at StrangeLove have given it a new twist by adding Applewood smoked water (yes, you can apparently smoke water. Who knew?).

Originally a recipe from the culinary brain of Masterchef's Matt Preston, with some added heat courtesy of our Fermented Red Chilli Paste, these sticky spicy cola chicken wings will be a sure-fire favourite at your next party, or cook them up for yourself with some steamed rice and an asian greens salad like we have.

Sticky Spicy Cola Chicken Wings

750ml of StrangeLove Smoked Cola
1 tbsp Agri Red Fermented Chilli Paste
1 cup of tightly packed brown sugar
1 large brown onion, grated
3 garlic cloves, grated
1kg of chicken wings (ours came from John Cesters)
2 tbsp of soy sauce
Juice of one lemon

Step 01:

Now – as far as recipes go – this one is so easy even you can get it right first go. This is specially designed for minimum effort = maximum wing time.

Pre-heat your oven to 140 degrees celsius.

Get out a large mixing bowl and a grater. Finely grate your onion and garlic cloves into the bowl to start your pungent base for the marinade.

Step 02:

Tightly pack a mixing cup with the brown sugar and add to the bowl – then add the soy sauce over top.

Step 03:

Pop in a generous tablespoon of our Fermented Red Chilli Paste. Now – when it comes to adding Agri – we will always provide a guide but go with your gut. If you are someone who lives on the milder side of life and appreciate the depth of flavour you get from the chilli, you can halve the quantity of paste. If you want to blow your socks off and impress your mates with how hot you can handle those wings – by all means double the recommended quantity.

Step 04:

Grab the special bottle opener usually reserved for the beers to open up your Smoked Cola. We highly recommend taking a swig to sample this Cola gem – as we can guarantee there is no other like it. Luckily if you purchased a 4 pack, there should be some left over for drinkin’ (or mixing with a nip of top shelf rum) later. Pour that bad boy into the bowl with the garlic and onion and let that sweet garlicky aroma awash over you, then give that bowl of black liquid gold a good stir. 

Step 05:

Lay your wings in single file on an oven proof tray and pour the cola mixture over until the wings are almost fully submerged.

Step 06:

Transfer the tray into the oven, set a timer for 3-3.5 hours later, and then let the heat do its thing. Now, we don't want to tell you what to do while you wait, but you have enough time to go and watch Titanic if you want to.

Step 07:

Eat 'em. If this sultry sticky marinade doesn't end up all over your face and crisp white shirt, quite honestly you aren't going hard enough, and we're disappointed in you.
